The purpose of this research was to determine the biochemical composition and fatty acids of two groups of cultured and wild fry of great sturgeon (Huso huso). The two batches (about 40 g) of fry from cultured broodstock (0.43±0.07g) and wild broodstock (0.54±0.09g) in three replicates were transferred to the laboratory and analyzed according to standard methods. Among all biochemical composition of the body, the protein had a significant difference between two groups of fry (P<0.05) as its rate in fry for wild and cultured broodstocks were 13.22 and 11.21% (w.w.), respectively. The amount of ω-3 fatty acids (wild fry 13.92±0.84%, cultured fry 12.07±0.10%), the DHA/EPA ratio (wild fry 2.27, cultured fry 1.83), MUFA (wild fry 31.89±0.30%, cultured fry 29.57±0.64%) and PUFA (wild fry 24.51±0.56%, cultured fry 22.21±0.31%) in fry produced from wild broodstock were significantly higher than those in cultured broodstock (P<0.05). The results of present study indicate the higher deficiency in biochemical nutrients of fry produced from cultured broodstock than those from wild broodstock.
