استخراج ژلاتین از فلس، پوست و استخوان ماهی سنگسر Pomadasys kaakan و مقایسه ویژگی‌های آن

چکیده

ژلاتین مجموعه‌ای از پپتیدها و پروتئین‌هایی است که از هیدرولیز جزئی کلاژن تولید می‌شود. فرآورده‌های جانبی ماهی، منبع غنی از کلاژن هستند. ویژگی‌های ژلاتین به منبع و شرایط استخراج آن بستگی دارد. در این پژوهش استخراج ژلاتین برای اولین بار از پوست، فلس و استخوان ماهی سنگسر معمولی (Pomadasys kaakan) از سواحل خلیج فارس با استفاده از روش استخراج قلیایی انجام شد. همچنین ویسکوزیته، قدرت ژلی، وزن مولکولی، بازده و درصد پروتئین مورد سنجش قرار گرفت. نتایج نشان داد ژلاتین استخراج شده از پوست دارای ویسکوزیته (42/102 میلی‌پاسکال)، قدرت ژل (437 گرم) و بازده استخراج (5/10 درصد) بیشتری نسبت به ژلاتین استخراج شده از فلس و استخوان بود و غلظت بالای پروتئین با بیش از 97 درصد برای هر سه نمونه به دست آمد. همچنین حضور زیرواحدهای اصلی α1، α2، β و γ در الگوی الکتروفورتیک تمامی نمونه‌ها به اثبات رسید. به طور کلی، نتایج نشان داد قدرت ژل و درصد پروتئین در ژلاتین استخراج شده از ماهی سنگسر نسبت به ماهی‌های دیگر به طور چشمگیری بالاتر است. علاوه ­بر ­این می‌توان بیان کرد روش قلیایی یک روش مناسب برای تولید ژلاتین با استحکام بالا در ماهی است.
